2 boneless, skinless chicken breasts
Salt and pepper
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (or panko)
1/2 cup grated Parmesan cheese
1 cup marinara sauce
1 cup shredded mozzarella cheese Olive oil
METHOD:
Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper. Dredge chicken in flour, shaking off excess. Dip in beaten eggs, then coat with a mixture of breadcrumbs and grated Parmesan. Heat olive oil in a large oven-safe skillet over medium heat. Cook chicken until golden brown on both sides (about 3-4 minutes per side). Spoon marinara sauce over the chicken. Sprinkle shredded mozzarella on top. Transfer the skillet to the preheated oven. Bake for about 15-20 minutes or until the cheese is melted and bubbly. Optionally, broil for a minute to get a golden crust. Serve the Chicken Parmesan over pasta or with a side of salad.
